12 meals to make using your leftover curry

Japanese curry is usually the first dish any new resident of Japan learns to make. It’s cheap, easy, and actually tasty, not to mention pretty healthy depending on how many vegetables you choose to add in. But as many new curry cookers have come to find out, it’s hard to make the exact amount of curry you want, resulting in an awkward amount of leftovers that’s too little to make into a full meal but too big to throw away. That’s why Japanese site, Naver Matome, compiled a list of 12 awesome recipes using that little bit of leftover curry we’re always stuck with. Enjoy our English version and never waste a drop of precious curry again!

1) Grilled Curry Sandwiches

A simple recipe (as long as you have a sandwich grill). Just stick a small amount of extra curry between two pieces of bread, add a slice of cheese if you please, grill, and you’ve got a delicious snack in just a few minutes.

2) Cheesy Curry Bake

Another easy recipe, though this one will be better if you have a larger amount of curry left over. Just put some rice in the bottom of a oven-safe dish, add your left over curry, top it with a hard boiled egg yolk, sprinkle with parmesan cheese, and pop it in the oven. You’ll be enjoying a small snack of cheesy-curry-goodness in no time.

3) Curry Cream Pasta

Make a creamy curry pasta with very little effort. All you need to do is add three tablespoons of cream to one cup of leftover curry. Add some spinach and ground chicken and you’ve got a delicious sauce. Toss in the noodles and this dish is done.

4) Curry Yakisoba

Yakisoba is another one of those easy to make Japanese dishes, but if you’re tired of the plain old stuff, just add leftover curry to the mix for a twist on a Japanese favorite.

5) Kimchi Curry Fried Rice

Most people should know how to cook fried rice, so spice up your usual dish with some kimchi and, of course, some leftover curry. It’ll give you an extra spicy kick.

6) Curry Paella

This one takes a little more effort, but if you do it right, the results will impress your friends. Saute one clove of garlic, one medium onion, squid (cut into rings), green beans, and shimeji mushrooms. Add 1.5 cups of rice to the pan and cook until transparent. Add two tablespoons of leftover curry, 1.5 cups of water, and one can of tomatoes to the pan. Put a lid on the pan and cook the rice for 15 minutes. Turn off the heat and let sit for an additional five minutes. Enjoy!

7) Curry Soba

If you know your way around a soup stock, you should be good with this one. Make a broth using your leftover curry, dashi stock, hot water, green onions and a little splash of mirin and cooking sake. Then boil up some soba noodles and you’re good to go.

8) Curry Udon

This one is similar to the curry soba, but this time, try adding in soy sauce and abura-age (fried tofu skins). Then substitute soba noodles for udon and you have yourself a slightly different noodle dish.

9) Curry Wonton

This one looks fancy, but it’s actually not too difficult. Add small dollops of your leftover curry to the middle of a dumpling wrapper. Pinch the sides like you see in the photo above and fry until golden brown. Delicious!

10) Curry Eggroll

Okay, so the recipe we found for curry egg rolls might surprise you, so feel free to get creative and add anything you like to the middle. Here’s what the recipe from cookpad, a popular Japanese recipe site, suggests: leftover curry, canned tuna, cheese, sausage. Wrap that all up in a spring roll wrapper and fry to a golden brown.

11) Curry Mabo Tofu

Mabo tofu (when made from a package) is another easy 10 minute dish from start to finish. Just add the packaged sauce, tofu, and some green onions if you’re feeling wild. Try adding in some of your leftover curry for a different, spicier taste.

12) Curry Nabe

Few things are better on a cold winter day than a dinner of hot nabe. Nabe is a Japanese hotpot dish typically filled with vegetables and bite-sized meats. You can add virtually anything you want to the pot, so why not try adding your extra curry to flavor the broth?

Yeah ? I don't even know many people born here that make theirs. Most people seem to buy it,

It's cheap and easy, yes. Not particularly tasty unless you like your curry with a thick dollopy coat, and absolutely not healthy unless you add enough veggies (4-5 kilos?) to counteract the huge amount of fat in those greasy cubes.

Proper curry isn't difficult to make, and so much more worth the effort. And there's never any left over, unless you make a point of making enough to freeze.

These ideas sound rather vile. Not a huge fan of Japanese curry, would far prefer Indian, Pakistani or Thai curry myself. Once or twice a year my wife will nag me to go with her for a katsu curry, i make sure i have had a few beers before hand to make it taste not so bad.

Grilled curry sandwiches sounds the most vile of the ideas especially the adding cheese part which no doubt means a slice of processed cheese.

Dang, quite a lot of negativity on a harmless little article about curry. I live alone, so I always have leftovers when I make a pot of it. I'm looking forward to trying some of these out!

If Japanese curry are too oily, what is about Indians and Pakistanis ones? Moreover Thai curry has coconut milk, which is far from being light. Some people should really think before talking...why do you think Japanese are considered the healthiest nation on earth? The ratio of overweight people is much higher in India then in Japan and this mainly due to alimentation. Anyway has someone mentioned before everybody has different taste but nutritional indicators cannot be denied.
