if it takes you nearly an hour to make a stir fry you are doing something wrong.  And here is a tip:  make sure your wok is hot before adding the oil.  Best not to heat the oil in a cold wok.  The oil will be hot before the wok.  If doing cooking in batches allow the wok to reheat before doing the next batch.

I use sunflower seed oil but other vegetable oils that stand the heat work just as well. I do not use olive oil as it has a distinctive taste and smell.

I use canola oil.  As Ron above says most vegtable oils are OK.  Certainly wouldn't use olive oil at high heats.  Ok if you are just sautéing something.
