Over ripe bananas are wonderful in cooking, much better than ordinary ripe bananas. Once I made banana ice cream with some, and it was very popular.

Freezing the bananas until stiff then thawing in a room temperature kitchen raises the sugar content to that of over ripe overnight. Leave the skins on or off doesn't matter. Using lemon juice instead of vinegar gives them a better fragrance. If you beat the egg whites separately and fold them in gently with the bananas you'll get MUCH fluffier pancakes. I'd tell you more but then I wouldn't be the only one making the best pancakes this side of the Pacific.

Those pancakes are a bit thick.

Pancake batter is simply equal parts of milk and flour, an egg and a pinch of salt.
