Ah colcannon. To much cabbage for my taste but it inspired a lovely song. One of my favorite renditions is from Mary Black:

Well did you ever make colcannon,

made with lovely pickled cream

With the greens & scallions mingled

like a pitcher in a dream

Did you ever make a hole on top

to hold the meltin' flake

Or the creamy flavoured butter

that our mother's used to make

I've never had colcannon, but I like what I see except for all that disgusting butter. Can you have it without?

Yes. There are vegan versions of colcannon but if you just want to eliminate the butter you can do that as well.

I guess some authentic dish from Europe such as this is not banned in US like Haggis.

Why do people in the US think the Irish scoff corned beef all the time? It’s a stupid streotype.

As for colcannon/champ, you need the right kind of potato to make it, most potatoes I bought in Japan didn’t have the right texture for mashing. And you need lots of butter for this. Lots.

It's many years since I have eaten that. Irish stew. Boiled bacon and cabbage. Lamb shank with rosemary. Potatoes with everything except Guinness.

Lord, I miss my nanie's Irish stew. I also desperately miss Irish breakfast bangers and rashers. Bloody pandemic...
