Browning butter creates high toxicity.

Nope, BURNING butter creates carcinogenic chemicals. Burning vegetable (sunflower, rapeseed, corn, etc) oils creates much more of the same carcinogenic stuff, experts say cooking with butter, olive or coconut oil, or lard, significantly reduces the risk:

Why would there be cream any way ? You know the saying "Architects hide their mistakes under ivy, cooks hide theirs in cream, doctors hide theirs in cemetaries...".

The creamy textured cauliflower 'velouté' (velvet) is classically made with white sauce (butter, flour, milk), and older recipes used almond meal.

How is butter bad for you? That’s old science.

Browning butter creates high toxicity. It's science. Ancestors knew how to clarify butter (ghee, smen..). That said, you don't die of cooking veggies once in a while, even if you fry, brown and overcook them. I mean in a world when most food served is mass processed crap and millions have potato fries as their greens... that recipe is not bad at all.

I too clicked on the recipe thinking it would be a non-dairy recipe since it's lack of cream was touted in the title.

:) - well, in this case the information is just as worthy as saying it doesn't contain any whale meat... And no, for sure I'm for sure not the only one understanding "low fat" from the title.

Presumably..... presumed only by you, ebisen. The title explicitly says, without any cream. Not, vegan, not low fat, not dairy free, just, without cream

Well, "without cream" presumably tries to sell this recipe to people trying to avoid lactates or fats... My point was that it's pointless to remove the cream and add 8 spoons of butter, as the fat contents will be higher. I don't even discuss the health implications of adding so much butter in one litter of water.

yeah, but with butter, even worse... you might want to rethink the title...
