It just won't be the same for kimchi. It's a must for almost every meal in Korea. It's unique flavor and qualities are superb. Korean food is under appreciated, and without kimchi it will be unappreciated even more. I hope they find some solutions. The Asian market near me has killer kimchi. It's great with a Whopper and with the Korean dinners I eat.

The trouble with most Kimchi available in the shops has been pasteurised to prolong its shelf life, so it has no benefit to your gut bacteria. It needs to be refrigerated and even then it only lasts 3-4 months.

I only buy Jongga brand and most other live Kimchi made in the UK just isn't the same, in texture or flavour.
