Make pancakes fluffier and healthier with this Japanese recipe

Japanese Twitter user ぼく Boku (@boku_5656) is a "culinary researcher" who posts recipes with cute illustrations on their account.

You may have already heard about incredibly soft and fluffy Japanese pancakes, but the recipe that Boku recently introduced has an added advantage: it's also healthy because the secret to making these pancakes fluffy is none other than... tofu.

Here's how to make it.

  1. Put 100 g of silken tofu (without draining) in a bag and squash by hand until smooth, then add 1 egg and squash some more.

  2. Put the mixture into a bowl and mix in 30 cc (1 fl oz) of milk, then add 150 g (2/3 cup) of pancake mix and stir around only about 10 to 20 times.

  3. Place the batter on an ungreased pan and cook over low heat, covered, for 1 1/2 to 2 minutes. Then flip, cover and cook for another 1 1/2 to 2 minutes. If you're making three pancakes, separate the batter into thirds and cook them one by one.

Often, when people make pancakes, they mix the batter until smooth, but this ends up removing many of the air bubbles, which are important for making pancakes tall and fluffy.

Boku's post received a lot of feedback, such as:

"Whoa! Looks delicious! I hadn't thought of adding tofu."

"I made it right away and got 25 mm thick fluffy pancakes! The edges are crispy and it's so good!"

"I made them and they were so fluffy! So easy. I'm sure I'll be making this again."

According to Boku, "Once you make these soft pancakes, you'll never go back to regular pancakes again!" Of course, it also helps that they're healthier than normal pancakes too, since they use tofu.

that's the thing about Japanese cuisine i dont understand. why pancakes have to be tall and fluffy? as far as i get it, its a Japanese variaton of pancakes, and more to that, its not just pancakes, many other things are made purpusefully too fluffy which its not exactly my cup of tea...
