Splendid! Great to see another recipe for parsnips. Just point me towards the local parsnip and gold beet section at the supermarket.

The story lists substitutes: carrots instead of parsnips and red beets instead of gold beets, which are both available in Japan.

Maria - exactly.
I love to cook, but finding rather commmon ingredients here - like parsnips or brussel sprouts or roma tomatoes or butternut pumpkins or..... - is often impossible.
Online direct from farmers increases the availability, but the cost can be prohibitive.
I understand this is Japan and daikon and the like reign supreme, but for such a great foodie country with a billion restaurants, the variety of fresh produce is extremely limited.
Hopefully growers and consumers wise up to the 1,000s of other vegetables that can be grown, and we see the day of making Parsnip & Golden Beet soup is no big deal.

Justin case anyone is unsure, "beets" are more commonly known as beetroot in many countries.
But I honestly have never come across golden beetroot before, so have learnt something new today.

Some have commented that these prime ingredients are not readily available in Japan.
The article mentioned substitute - carrots over parsnips (not if you want a parsnip flavored soup - carrots do not impart parsnip flavor, but are readily available in Japan)

I and Maria simply mentioned the plight of sourcing a variety of quality vegetables in Japan to make the delicious recipes presented.
I think I can count on 1 hand the number of times I've seen parsnips, goldenbeet or redbeet in common markets here in 20+years. And I look for anything.

Fancy this recipe but even here in the UK where beetroot is a common veg, I can’t find golden beetroot in any major supermarket.
