RUBIA, fine dining and mixology/barista lounge, opens in Tokyo's Shibuya district

Located conveniently on Spain-zaka in Tokyo's Shibuya district, RUBIA is a new and exciting dining and mixology venue that opened this month. The spacious, modern décor, two floor establishment operates as a fine dining restaurant on the first floor and as a mixology/barista lounge on the second floor.

The daily operations of RUBIA start as early as 8 a.m. with a hearty breakfast/brunch menu which is health-advised by a doctor and end as late as 1 a.m. at the bar. Take-out coffee and Mexican Hot Chocolate from the barista lounge is also available during operation hours.

Inspired by cuisine from both Mexico and Japan, the owners, Edo Kobayashi of Edo Kobayashi Group and SARASA of CASA DE SARASA, combined culinary forces to establish this space in the heart of Tokyo for patrons to enjoy a modern Mexican and Japanese food and beverage fusion experience. Although each dish and signature cocktail are presented with contemporary flair, the chefs and mixologists at RUBIA practice the traditional cooking methods from Mexico as well as applying the philosophies that are deeply rooted in Japanese cuisine, showcasing the seasonal produce and ingredients of Japan.

SARASA, who is also an acclaimed DJ/artist in Japan originally fell in love with Mexican culture and cuisine from touring the country many times through the years. She states, “RUBIA is a place for Japanese patrons to savor Mexican cuisine with a nostalgic sense of Japanese washoku (Japanese food). They can also discover Mexican beverages and cocktails and have access to RUBIA’s impressive selection of tequila and mescal. I really want to showcase new culinary possibilities of the flavor profiles from both Japanese and Mexican cuisine to my international friends and guests."

Edo Kobayashi adds, “We incorporate local Mexican ingredients, brands and art to showcase a unique, one-of-a-kind side of Mexico at RUBIA."
