So, "about 7" egg yolks are thrown away each time you make this recipe? Personally, for the taste and flavour, I would leave them in.

You can use extra yolks to make ice cream, lemon curd, custard, mayonnaise, creme brulee....but yes, I would leave them in the scramble, too.
