On the subject of American cookbooks, my favorite is still "The Fanny Farmer Cookbook." It is the very first American cookbook, assembled by the Boston Cooking School, and came out in the 1890s, 35 years before "The Joy of Cooking" was originally published. They Joy of Cooking is rightfully well respected, but I recommend the Fanny Farmer Cookbook, despite the odd title.
