They may do scientific studies, but when I've eaten at a kaiten-zushi I've seen pieces that have been "around the block" more than a few times. It's hard to face a baby squid roll when it's staring back at you.

Hanaya Yohei invented nigiri sushi around the time Perry visited Japan, and it has been updated regularly ever since. One of my favorites is California-maki. The new technologies have their advantages, but may not appeal to everyone.
