This is merely roast cauliflower and a simple version of cauliflower cheese.

And? What is your point? Is there something wrong with that?
Other than the caloric content, there isn't anything wring with fat, butter or cheese. And the eater will still get the nutrient benefit of the cauliflower.

That's kinda like saying, "other than the sugar content, there isn't anything wrong with candy."

No its not, because unlike sugar, we actually need calories to live, and there is nothing wrong with calories in and of themselves.
For example, eating 500 calories worth of vegetables and 500 calories of candy are not the same thing. Both are 500 calories, but the candy is going to be way worse for you. My point was that you may get more calories than you want/need from this dish, but there isn't anything bad for you in there like there is in candy (sugar), and you also get all the healthy nutrients from the cauliflower, as well as the good fats from the butter and cheese (and things like calcium from the cheese as well).
Ah_so
And the moral of the story is, covering anything in cheese and mayonnaise and it is edible to a child.
