Sakuramochi. The combination of the salty and slightly sour cherry tree leaf with the sweet anko makes it my favorite. In general I think wagashi is gets too little attention when peope talk about Japanese food.
Yatsuhashi from Kyoto has to be at or near the top of my list. I also love the Marusei Butter Sand from Hokkaido. And though the Shiroi Koibito itself wouldn't be near the top of my list, I highly recommend visiting the Shiroi Koibito factory in Sapporo. My wife dragged me there, but I think I had the best time of everyone in our family. Very interesting place. It's not just a factory. It's a museum, too, with lots of interesting items besides chocolate and Shiroi Koibito.
I gotta have pizza poteto, along with the Japanese version of Doritos (タコス flavor). I also enjoy the rectangular chocolate on top of cookies. They’re great on a road trip. The ramen chips are great, too.
