I never had the opportunity to go Hokkaido for ski, but I would love it. The close version is Niigata, 2-3 hours drive (or shinkansen to Echigo Yuzawa then bus), there are some great slopes around.
And if snow and cold is not your thing (e.g. my wife), Okinawa is quite nice in winter.

Hokkaido or any Onsen villages. Winter is great for the seafood and onsen time.

Hokkaido for some snow. If you're going have winter, might as well do it properly.
