Because the press photographers tell them to. There is no point in doing so however as the gold medal is silver with six grams of gold plating. (fun fact: the bronze metal is not bronze either, it is brass).

When working with gold to make jewelry it must be anealed by putting to the torch to glowing red and then quenched to reorganize the moleculer structure. Common knowledges for anyone that has processed metals for making jewelry.

As other posters have mentioned, it’s an ancient custom to verify the purity of gold, as pure gold is relatively soft, but mostly, it does not give a “tingly” sensation to the teeth like other metals.

RC is correct, started when people would bite a coin to check if it was gold or not. 24K pure gold is relatively soft. Just note, most gold jewelry that is advertised as 24K is not, it has enough other metal to make it hard enough not to scratch.

It is an old custom, when the authenticity of gold was tested in this way, especially in the Middle Ages. Because the higher the purity of gold, the softer it is.
