Because the press photographers tell them to. There is no point in doing so however as the gold medal is silver with six grams of gold plating. (fun fact: the bronze metal is not bronze either, it is brass).
When working with gold to make jewelry it must be anealed by putting to the torch to glowing red and then quenched to reorganize the moleculer structure. Common knowledges for anyone that has processed metals for making jewelry.
24karat gold is soft, and resistant to oxidation. That is why it is precious like a domineering dominetrix.
You can take a vadibule bite to check its score of 1-10 on the scale of sensitive to its annealing abilities, thus they chomp on it.
Basic metallurgyscience. You people must study more.
As other posters have mentioned, it’s an ancient custom to verify the purity of gold, as pure gold is relatively soft, but mostly, it does not give a “tingly” sensation to the teeth like other metals.
RC is correct, started when people would bite a coin to check if it was gold or not. 24K pure gold is relatively soft. Just note, most gold jewelry that is advertised as 24K is not, it has enough other metal to make it hard enough not to scratch.
It is an old custom, when the authenticity of gold was tested in this way, especially in the Middle Ages. Because the higher the purity of gold, the softer it is.

Biting Your own medal: fine.
Biting someone else’s [anything], (without prior consent): just plain ‘stupid’
ZALD
It's out of the question. No matter what the situation is, it is ridiculous to bite any other person's objects.

Olympic gold medals are gold-played. You can see the electro-plating process on YouTube.

"vadibule" Don't know what that means, obviously need to study more.
So, you believe that an Olympic gold medal is made from gold?

Because they can't think of anything else to do when posing.

Because some people want to break their teeth?
That pose is about as stupid and unoriginal as the V-sign when having your photo taken.

It's a little but of stupidity which started at either the last games or the one before it and was / is encouraged by the idiotic photographers.

Because they now can and you with highest probability never can.
