Who is taking video in the kitchen when he did it? Sounds to me that there is a hell of a lot more behind this than just what is being reported here!

I worked in this kind of restaurant, and there are security cameras all over the place. No need for anyone else filming.

They will be very lucky if they are not sued for damages. But this is a sad trend among younger baito workers in Japan. They often have exactly zero brain cells in use. Used to be you could count on even low-paid workers to do their job conscientiously here. No more.

Problems like this emerge more if they keep hiring part-timers whose responsibilities are as much as nothing.

Just ANOTHER reason to avoid super cheap sushi joints, the Y100 ones are downright nasty, sign of how low Japan has sunk unfortunately

Don't do that on camera if you're going to pick fish out from the garbage and put it on the cutting board.

Of course there are the good-quality chains and then the awful-quality ones. All are not the same.

When I was a student, I worked in a hotel kitchen one summer. I learnt how they work. Everything is counted and accounted for. If something goes missing, it is assumed one of the staff has stolen it. As a result, nothing is thrown away as the staff do not want to be accused of theft. I have never worked in a sushiya, but I imagine that they may order cuboid blocks of maguro a certain size that have produce an exact number of slices, which have to produce an equal number of pieces of sushi, and the staff better not eat one.

It is safer to eat in smaller restaurants where the owners produce the food and the customers are regulars. If someone gets sick, they lose a customer, and that costs them, so they make sure the food is safe.

Basically, the same is true the world over. Anthongy Bourdain, when asked if he ever got sick eating street food, pointed out that street food was safe. It was the buffets in chain hotels that sometimes knocked the film crew out.

Many years ago, they had a feature programme on TV about one of the luxury JR trains. The sushi chef cut his finger, yet still carried on preparing sushi! Vaunted standards of food preparation take a hit, just like cars, steel, and the rest...

I wouldn't take that at face value. It's safer to eat some street food than others. I avoid Cambodian street food, but Thai I don't worry about. That said, I also take a look at the hygene of the seller's area - if it looks bad, I stay away.

Street food is usually fine IF cooked!

I would avoid things like salad, water, ice cubes etc. But NOT because it is unsafe BUT because I am NOT used to the local water, like the locals, THAT can get one sick quick!

Basically come down to common sense

Let's face it... if the cost of sushi is based on the color/design of the plate it is on... you deserve whatever you get.

My partner and I got sick in one of their restaurants. Never been back since. Better to go to the sea and eat fresh local sushi.

I have no doubt there is far worse being done at all these places, and maybe even high-end establishments where you can't see how the food is handled. Best not to think about it if you go out to eat.

We purchased a large platter from a local Kurasushi for a small gathering in our Kansai home. It was fairly awful. The reason we did it was because the Kurasushi near our California home is excellent, and we assumed it would be even better at a JP location. To our surprise and disappointment, it was not.

Yeah, right. So where's that footage?

Where's the footage of the fish actually being put on a plate for a customer?

I've eaten at Kura Zushi I don't know how many times, it's always good, can't beat it for only 108 yen a plate, this one incident is not gonna make me stop eating there.

Saw this on TV news. I really wish they wouldn't sensor out the faces. These idiotic people should be seen by all!!!! Don't care if they are under 20. Show their face!
