Congrats to him. I wonder if he can make a great German "Baurenbrot" absolutely the best! The one thing that is missing in Japan. He must be really good, because bread is a staple for many Europeans, so this guy must possess some mad skillz

Heck, when I used to cook in restaurant kitchens ( and boy do I have experience in cooking in restaurant kitchens ), we wore hats to keep our hair out of the food, but they weren't ridiculously tall, and, sure, we were sweating, but as they say, if you can't stand the heat, get out of the kitchen!

They wear them to keep their hair out of the dough. They're tall to allow their heads to breathe in the heat of the kitchen. Otherwise, it'd be sweat city... ; )

I have respect for bakers because that requires precise measuring and a high level of skill, but I wish they wouldn't wear those ridiculous tall hats.

I love the bakeries here. There is one near my station and they have some delicious sandwiches.

Congrats to him. I wish, however, it was easier and cheaper to buy brown/wholemeal bread in Japan. If you like sweet, processed-to-hell white bread, Japan must be heaven.

Good bakeries perhaps but not enough selection. In Europe, especially Holland, France and Italy there is a huge variety of very good bread. But kudos to the chef for winning this
