"The Breakfast Queen of NYC," Sarabeth Levine (namesake of the now world famous Sarabeth's) was recently in Tokyo opening her fifth restaurant in Japan and her 16th globally.
While here, we were afforded the opportunity to talk with her about what's new on the menu, her newest cookbook and how she got started in the restaurant business. We also requested she provide useful advice for our readers/visitors/viewers and listeners who might be thinking about getting into the food biz.

I've never heard of this chain and certainly never seen one when I've been in Tokyo... World famous? Really?

She does not have a NY accent at all like I do. Mine is a NYC Queens accent. Queens county, not Kings County which is Manhattan.
This is a high end boutique restaurant made for tourists.
New Yorkers do not eat this stuff for breakfast. We go to a deli and get an egg on a roll special and a regular coffee. Easy, fast, cheap and good.

Haven't been to the Sarabeth's in Shinagawa. I thought I knew all the nice places in Shinagawa... just kidding.
After a very long time, I saw a nice interview video. She sounds very honest, fun and down-to earth. Sent the link to my sis who is interested more in this field.

World famous as in World Series, dammit!
