Germany is one of the worlds large maratime trading nations with billions of Euro's worth of products transiting the region. German interest clearly extends to everywhere they trade to, and the waters their trade moves through.
The world is a small place when your goods are sold to just about every nation. So when one nation takes actions to restrict passage and claim ownership of international waters it will create concern for those nations who rely on free and unfettered access.
The actions of China claiming ownership of international waters and territorial waters of other nations clearly concern trading nations around the world. How anyone could fail to understand such a basic concept is puzzling.

It clearly IS their business. Try telling the rich and ruling classes in all Asian nations they cant buy quality German cars and machine tools and many other German made goods, they would line you up in a firing squad.
Germany has the right to sail in ALL international waters, including those in the Asia-Pacific region without needing to ask China for permission. Get used to it. The same applies for all nations.

Why not hope for North Korea/China/Russia/etc. have a new leadership that would come to power and have a bit more natural and constructive policy with Japan?

The moment people start picking who gets to use international space is the moment public areas no longer belong to the public. Governments around the world already control so many areas of the globe, why would ya give them even more power to control who gets to use INTERNATIONAL areas?

Germany is making profits by selling a variety of products, including cars, in the Chinese market. If the Chinese Communist Party were to start a war of aggression like Russia, it would be an immeasurable blow to Germany, more so than to Japan.
The peace and security of the East Asian region is of concern to Germany.
The aggressive nation of China has already seized territory from the Philippines, oppressed ethnic minorities, and is trying to skim off the territory of neighboring countries.
The growth of such a country cannot be overlooked, both for the sake of the global economy and for the sake of world peace.
There are obvious reasons why China is disliked and is subject to sanctions and containment by Western countries.
