Why would any company trust this service with all their documents.

All pdf's can easily be sealed with a hanko but are those digital Hanko documents legal?

Documents sent electronically are self-authenticating. All you need is an encryption key.

Companies like Adobe have been offering these kind of options for documents for a while now. Japan and modern technology are sometimes and oxymoron.

You can already do that with Adobe Acrobat (and a lot more) for a long time. They make sure it is safe.
