There's no way to know what you are losing. Even googlers don't know the answer to that except to say that everything google can capture, they do. They never delete anything, regardless of what you do in the interface. To google "delete" just means "hide from the end-user forever", nothing more.
I've spoke to current and ex-googlers about their retention, capture, and use of data.
BTW, google is pretty good at security, but terrible at privacy. They do make mistakes, but quickly recognize and correct any leaks, usually before anyone outside google notices. There have been a few exceptions.
Google does some things that seem creepy if you are unaware. But if you know about those things, it appears to be cleaver. Just depends on your stance.
Google scares me more than any other company today. Much more than facebook or any other social network platforms. Google has been caught multiple times saying they didn't capture X data, only to be proven liars. And the data they capture is so very complete on all Android devices that have google play capabilities ... well ... I find it frightening. I'd rather fly on a 747-Max8 today, than trust google.

Becoming more like China, ironically (Chinese government determines who can do business in China - they did ban Google there)

US democracy: The US will tell you with whom you can do business. This has nothing to do with national security but everything to do with increasing American share of the communications market.

Much of the world doesn't use google stuff. This is only a blow for the "followers" who don't care about privacy.
Many Android tablets have no ties to Google at all. They work fine. There are other non-Google "app stores" available like F-Droid and Amazon.
It is also possible to run non-Google versions of Android on many phones, but this is still beyond most end-users, so the community is fairly tiny.
I'm torn as to which of these two companies, Huawei or Google, is more dangerous to democracy and freedom. It is a toss-up today, IMHO.
I still use a Huawei phone (without google's version of Android) and actively block all google subnets that I can on the network both in the network equipment AND on each device. The number of tracking services out there are really crazy. I'm currently blocking about 130K of them.
